Shortcut German Potato Salad
After three trips to Germany, I have grown to appreciate how wonderful their cuisine is. I grew up with some of the food through the German Amish of Pennsylvania and their dishes that Mom would recreate. Her German Potato Salad was the only potato salad I would eat for a long time. Then, I found this recipe.
This may not be traditional German Potato Salad, but it gave so much new life to that plain old box of scalloped potatoes, I don’t think I’d ever want them plain again! I served it as a side dish, but if you want to be fancy, line a bowl with lettuce and fill it with the hot potatoes.

A superbly easy way to make this hot salad! If you like tang-ier salad, add a bit more vinegar to your taste.
Ingredients
4 slices bacon
1 box (6oz) scalloped potatoes
1 heaping tsp onion flakes
1/2 tsp sugar
2 tbsp cider vinegar
Directions
Forty minutes before serving, fry bacon crisp and drain. Crumble bacon. Drain fat, empty potatoes into pan with seasoning; stir in 3 cups water, onion flakes and sugar; cover and cook on low for 30 minutes until potatoes are tender. Stir in vinegar and bacon bits. Serve hot.
(To be honest, I didn’t drain the bacon fat the first time and only drained part of it the second time. I love the flavor it added to the potatoes!)
